Merguez is spicy sausage, used in North African cuisine, and usually made from lamb or beef or combination of both. Sausages are flavoured with wide variety of spices, such as cumin, harissa ( very hot red chilli paste), cayenne pepper and coriander. Merguez sausages usually served as appetisers or with couscous or in tajine.
In this recipe I use chicken merguez.
4-5 merguez sausages
4-5 triangular or rectangles pizza dough
Preheat oven to 200 degrees C. Heat up skillet over medium heat and brown Merguez sausage from each side. Cut triangle or rectangles out of dough, then place sausage on the dough and wrap around. Bake in the oven for approx. 15 min or until dough is golden. When ready brush with butter.
